Vegan Raspberry Raw Cakes
Ingredients
Brownie
- 1 cup macadamias
- 1 cup hazelnuts
- 1/2 cup whole blanched almonds
- 2 cups medjool dates, pitted
- 3/4 cup cacao powder
- 1/3 cup rice malt syrup
- 2 tablespoons maple syrup
Vanilla layer
- 2 cups soaked cashews
- 1/4 cup rice malt syrup
- 1/2 cup coconut cream
- 3 tablespoons almond milk
- 1 teaspoon vanilla powder
Chocolate layer
- 2 cups soaked cashews
- 1/2 cup cacao powder
- 1 cup coconut cream
- 1/3 cup rice malt syrup
- 1/4 cup almond milk
Preparation
Blend the brownie layer in a food processor by first blending the nuts and then pressing the mixture into a square pan lined with parchment paper. Place in the fridge while preparing the vanilla layer.
Blend all ingredients for the vanilla layer using a blender. Pour onto the brownie layer and add raspberries if desired. Freeze for a few hours or overnight.
Blend all ingredients for the chocolate layer and pour on top. Freeze until set.
