Vegan Raspberry Raw Cakes

Ingredients

Brownie

  • 1 cup macadamias
  • 1 cup hazelnuts
  • 1/2 cup whole blanched almonds
  • 2 cups medjool dates, pitted
  • 3/4 cup cacao powder
  • 1/3 cup rice malt syrup
  • 2 tablespoons maple syrup

Vanilla layer

  • 2 cups soaked cashews
  • 1/4 cup rice malt syrup
  • 1/2 cup coconut cream
  • 3 tablespoons almond milk
  • 1 teaspoon vanilla powder

Chocolate layer

  • 2 cups soaked cashews
  • 1/2 cup cacao powder
  • 1 cup coconut cream
  • 1/3 cup rice malt syrup
  • 1/4 cup almond milk

Preparation

  1. Blend the brownie layer in a food processor by first blending the nuts and then pressing the mixture into a square pan lined with parchment paper. Place in the fridge while preparing the vanilla layer.

  2. Blend all ingredients for the vanilla layer using a blender. Pour onto the brownie layer and add raspberries if desired. Freeze for a few hours or overnight.

  3. Blend all ingredients for the chocolate layer and pour on top. Freeze until set.

  4. Enjoy the cake.
