Quick Vegan Spaghetti Carbonara
Ingredients
- 1 medium onion
- 2 cloves garlic
- 2-3 rashers vegan bacon
- 3 tablespoons nutritional yeast
- 1/2 teaspoon English mustard
- Generous pinch pink or sea salt
- Black pepper
- Pinch black salt (optional)
- 30 grams grated vegan cheese
- 1/2 teaspoon smoked paprika
- 1 cup vegan cream
- 1/2 cup peas
- Spaghetti for 2-3 people
Preparation
Prepare the pasta in a saucepan and allow it to cook while making the sauce.
Heat 1 tablespoon oil in a large frying pan on medium heat.
Add the chopped onion and fry for 3-4 minutes to soften.
Add the garlic and stir in.
Add the sliced vegan bacon and cook for a couple of minutes.
Stir in the frozen peas and cook for a couple more minutes.
Pour in the cream, mustard, nutritional yeast, salt, pepper, and paprika.
Simmer for 2-3 minutes, stirring occasionally.
Add the cheese and give it a good stir.
Add the black salt if using and mix again.
Drain the cooked pasta and add it to the sauce.
Coat the pasta in the sauce and it is ready to serve with optional grated vegan Parmesan, fresh parsley, and a pinch of paprika.
Notes
This meal is wholesome, creamy, and rich, and can be made in less than 20 minutes.
Vegan pastrami can be used as a substitute for vegan bacon if desired.
