Bell Pepper Salmon Sushi Rolls

Ingredients

  • 4 orange bell peppers
  • 1 tablespoon olive oil
  • 1 tablespoon mirin
  • 2 tablespoons soy sauce
  • 1/2 tablespoon sesame seeds
  • 2 tablespoons sesame oil
  • 1/2 tablespoon almond milk
  • 4 sheets seaweed
  • 2 cups sushi rice
  • 2 avocados

Preparation

  1. Preheat oven to 400 degrees.

  2. Place bell peppers whole on a baking sheet with parchment and mix with olive oil.

  3. Roast for 1 hour.

  4. Remove peppers and place in a heat-safe container, cover with a towel to steam and cool for 30-45 minutes.

  5. Peel the skin and seeds of the bell pepper and thinly slice into sashimi-like pieces.

  6. In a bowl, mix the bell peppers with mirin, soy sauce, sesame seeds, sesame oil, and almond milk; marinate and cool for up to 1 hour or overnight.

  7. Assemble sushi rolls by adding rice on seaweed, then the bell peppers, sliced avocado, sesame seeds; roll and cut.

  8. Serve with soy sauce and enjoy.
