Quinoa Sushi with Miso Tahini Dressing

Ingredients

  • 250g quinoa
  • 500ml water
  • 2 Tbsp rice vinegar
  • 1 Tbsp Agave
  • 5 seaweeds wraps
  • 1/2 cucumber
  • 1 large carrot
  • 1/2 medium avocado
  • 200g tofu

Dressing

  • 2 tsp white miso paste
  • 3 tsp tahini paste
  • 2 tbsp almond milk
  • 2 tsp sesame oil
  • 1 tsp agave
  • 3 tsp rice vinegar
  • Sesame seeds
  • Cilantro
  • Rose petals

Preparation

  1. Cook quinoa with water until fluffy

  2. Mix cooked quinoa with rice vinegar and agave

  3. Slice cucumber, carrot, avocado, and tofu into thin strips

  4. Prepare the dressing by combining miso paste, tahini, almond milk, sesame oil, agave, and rice vinegar; mix well

  5. Assemble sushi rolls by placing seaweed wrap on a mat, spreading quinoa, adding vegetables and tofu, rolling tightly, and slicing into pieces

  6. Serve rolls with dressing, garnished with sesame seeds, cilantro, and rose petals
