Tempeh Sushi Sandwich with Brown Rice
Ingredients
- 1 cup cooked brown rice
- Sushi rice seasoning
- 1 sheet nori
- Tempeh
- 1/3 cup thinly sliced grated carrot
- 1/2 cucumber, thinly sliced
- 1/2 avocado, thinly sliced
Preparation
Slice tempeh through the middle, cut into 10cm squares, and shallow fry in olive oil until golden brown using 1 tsp oil, or bake for oil-free option.
Cook brown rice until well done, add sushi seasoning, and allow to cool.
Place nori sheet shiny side down on a piece of plastic wrap.
Place half of the rice onto the center of the nori sheet in a 10cm square at a 45-degree angle.
Place tempeh on top of rice then layer with carrot, cucumber, and avocado.
Fold corners of the nori sheet into the center to create a square.
Gather plastic wrap around sandwich and place seam side down in fridge for 10-15 minutes.
With a sharp wet knife, slice through the center of the sandwich.
