Homemade Vegetable Sushi Rolls with Dipping Sauce

Ingredients

  • 3 sheets of seaweed
  • 3 cups of boiled brown rice
  • 3 tablespoons of rice vinegar
  • 1 cup of grated carrots
  • 1 cucumber sliced thin
  • 1 avocado sliced thin
  • 1 teaspoon of sesame seeds for garnishing
  • 1 tablespoon of pickled ginger sliced
  • 1 tablespoon of spring onion cut thin

Dipping sauce

  • 2 teaspoons of tamari sauce
  • 2 teaspoons of maple syrup
  • 2 teaspoons of balsamic glaze
  • 2 teaspoons of water

Preparation

  1. In a bowl, place the rice and vinegar and combine.

  2. Place a sheet of seaweed on the bamboo mat and spread a cup of rice evenly.

  3. Place some carrot, cucumber, avocado in the centre and roll the sushi into a log.

  4. Repeat the process.

  5. Once rolled, cut and garnish the rolls.
