Ingredients
Avocado mango rolls
- 1 cup black rice
- 1 sheet dried nori
- Avocado
- Cucumber
- Mango (FODSWAP: papaya, pineapple or strawberries)
Teriyaki tofu rolls
- 1 cup white rice
- 1 sheet dried nori
- Teriyaki tofu (firm tofu marinated in a mix of soy sauce, maple syrup and ginger)
- Carrots
- Red bell pepper
Preparation
Cook the black rice according to package instructions for Avocado Mango Rolls
Slice the avocado, cucumber, and mango into thin strips for Avocado Mango Rolls
Place a sheet of nori on a bamboo mat, spread the cooked black rice, add the sliced fillings, and roll tightly for Avocado Mango Rolls
Cut the rolled sushi into bite-sized pieces and serve for Avocado Mango Rolls
Marinate firm tofu in a mixture of soy sauce, maple syrup, and ginger for at least 30 minutes for Teriyaki Tofu Rolls
