Vegan Sushi with Avocado Mango and Teriyaki Tofu

Ingredients

Avocado mango rolls

  • 1 cup black rice
  • 1 sheet dried nori
  • Avocado
  • Cucumber
  • Mango (FODSWAP: papaya, pineapple or strawberries)

Teriyaki tofu rolls

  • 1 cup white rice
  • 1 sheet dried nori
  • Teriyaki tofu (firm tofu marinated in a mix of soy sauce, maple syrup and ginger)
  • Carrots
  • Red bell pepper

Preparation

  1. Cook the black rice according to package instructions for Avocado Mango Rolls

  2. Slice the avocado, cucumber, and mango into thin strips for Avocado Mango Rolls

  3. Place a sheet of nori on a bamboo mat, spread the cooked black rice, add the sliced fillings, and roll tightly for Avocado Mango Rolls

  4. Cut the rolled sushi into bite-sized pieces and serve for Avocado Mango Rolls
