Vegan Taco Recipe

Ingredients

  • 12 pack soft tortilla wraps
  • 2 cups plant based chicken
  • 2 cups chopped red cabbage
  • 1-2 jalapeño
  • Cilantro
  • ⁃ 1 lime
  • 2 avocado
  • Vegan Sour cream (Tofutti)
  • 2 cloves garlic
  • 1 red onion
  • 2 tbsp of vegan mayo
  • Seasoning: salt, pepper, red chilli powder

Preparation

  1. Steps ⁃ Prepare vegetables by finely dicing jalapeño and garlic; cut cabbage and onion into long thin slices

  2. In a medium sized pan/wok, add 3 tablespoons of olive oil on medium heat ⁃ Sauté onions and garlic until translucent

  3. Toss in plant based chicken and cook for a few minutes, stirring occasionally until you achieve a nice sear ⁃ Season the plant-based chicken as desired

  4. We used salt, pepper, red chilli powder & 1 lime. Adjust to taste! Then take off heat and set aside

  5. Prepare the cabbage: massage it with salt and let it rest for 10 minutes. Then, rinse with water and squeeze all the water out. Add the mayo and toss until evenly coated

  6. Assemble: lightly warm tortilla and add your toppings: soy chicken, cabbage, corn, jalapeño, fresh cilantro. Don’t forget the vegan sour cream and freshly sliced avocado
