Chipotle Tacos Smashed Avocados

Ingredients

  • 14 oz block organic firm tofu
  • 10-12 small street style corn or flour tortilla
  • 1 cup cilantro, chopped
  • 2-3 cups thinly sliced purple cabbage
  • 1 cup pickled onions
  • 2-3 hass small avocados
  • sea salt and cracked black pepper
  • marinade
  • 1-2 tablespoons maple syrup
  • 2-3 cloves minced garlic
  • 1/4 cup extra virgin olive oil
  • lime crema
  • 1/2 cup cashew yogurt or regular greek yogurt
  • 1-2 tablespoons vegan mayo, optional
  • 3 tablespoons lime juice

Preparation

  1. Pre heat the oven to 450 °f

  2. Spray two baking sheets with oil

  3. Place the tofu and cauliflower florets in two separate bowls

  4. In a small food processor blend all the ingredients for the marinade

  5. Divide the marinade and coat the cauliflower and protein

  6. The cauliflower takes more of the marinade but you can eye ball it

  7. Place the cauliflower tray in the oven and 10 minutes later the tofu can go in

  8. Cook for a total of 25-30 minutes till the cauliflower are charred around the edges and tofu has charred a little

  9. While they cook prepare the rest

  10. In a small bowl mix the ingredients for the lime creme and set aside

  11. Smash the avocado and season with salt and pepper

  12. Once the cauliflower and protein is done

  13. Transfer trim on to a plate and serve
