Fresh Rainbow Veggie Wrap with Peanut Sauce

Ingredients

  • Collard green
  • Tofu
  • Peppers
  • Bean sprouts
  • Avocado
  • Cabbage
  • Mango
  • Carrots

Peanut sauce

  • 1/3 cup creamy unsalted sunflower seed butter
  • 1 1/2 -2 Tbsp tamari
  • 2-3 Tbsp maple syrup
  • 1/2 medium lime, juiced
  • 1/2 tsp chili garlic sauce
  • Hot water (to thin)

Preparation

  1. Wrap the colorful veggies in collard green

  2. Mix the peanut sauce ingredients together, adding hot water to thin as needed

  3. Dip the wrap in the peanut sauce and enjoy
