Rainbow Collard Green Wraps

Ingredients

  • 4-6 big collard green leaves
  • 1 block firm tofu
  • julienne cucumbers
  • shredded carrots
  • microgreens
  • fresh cilantro
  • for the sauce:
  • 1/4 cup peanut butter
  • 1 tbs water
  • 1 tbs soy sauce
  • 1 tbs sesame oil
  • 1 tbs maple syrup
  • 1/2 lime, juiced
  • 1 clove garlic
  • 1 tbs sriracha

Preparation

  1. Boil water in a large pan and blanch the collard green leaves, one at a time

  2. Cook for 30-60 seconds then dunk into cold water to stop the cooking process

  3. Remove the thick stalk to make it easier to form wraps later

  4. Cut your tofu into thin slices and fry in pan until golden brown

  5. Mix all your sauce ingredients together and adjust flavors as needed

  6. To create the wraps, take a collard leaf and spread some of the peanut sauce to create a sticky barrier

  7. Lay on a piece of crispy tofu and proceed with all your veggies

  8. Wrap up the collard and then wrap it again with another leaf! this is to ensure your wrap holds together
