Baked Hemp Falafel Salad Bowl

Ingredients

Falafel

  • 100 ml water
  • Olive oil
  • 100 g @morlife Hemp Falafel Mix

Sauce

  • 1/4 cup tahini paste
  • 2 tablespoons lemon juice
  • 2 tablespoons maple syrup
  • 1 tablespoon dijon or classic mustard
  • 1/2 teaspoon salt
  • 1/3 cup water

Salad

  • 1 cup quinoa, cooked and cooled
  • 1 avocado (thinly sliced)
  • Lettuce leaves
  • Cherry tomatoes
  • 1 carrot sliced in strips with a peeler
  • 1 red onion

Preparation

  1. Preheat your oven to 200C (392F).

  2. In a bowl, combine all falafel ingredients. Allow water to absorb for 5 minutes and stir again.

  3. With damp hands, shape falafel mix into small to medium balls.

  4. Spray falafels lightly with oil and place on a baking paper lined tray.

  5. Bake for 20 minutes until light brown and crispy. Flip halfway.

Sauce making

  1. Add all sauce ingredients to a blender or food processor and blend until smooth. Set aside.

Assembly

  1. Place all of the salad items layered in a bowl.

  2. Add the falafel on top and drizzle on the dressing before serving. Enjoy.
