Creamy Sweet Potato and Coconut Curry
Ingredients
- 2 medium sweet potatoes, cubed
- 1 yellow bell pepper, thinly sliced
- 1 small broccoli, cut into florets
- 1 garlic clove, minced
- 1 piece of ginger, minced (12 g)
- 2 Tbsp rapeseed oil
- 1 can coconut milk
- Curry spice mix (2 tsp ground coriander, 1.5 tsp turmeric, 1.5 tsp cumin, 1/2 tsp cayenne pepper, 1 tsp salt)
- 1 squeeze of lemon juice
Preparation
Heat up oil in a large saucepan. Add minced garlic, ginger and spices and sauté for a minute.
Add the sweet potato and bell pepper and sauté for half a minute before adding the coconut milk. Bring to a boil and let simmer with a closed lid for 15 min.
Add the broccoli and let simmer for another 10 minutes. Add lemon juice, salt and pepper to taste.
