Spicy Harissa Curry with Vegetables

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 3 heaped tbsp harissa paste
  • 1 can coconut milk
  • 1 cauliflower, chopped into florets
  • 1 bag spinach
  • 3 sweet potatoes, cut into pieces
  • 2 tbsp honey

Preparation

  1. Coat the sweet potato and cauliflower in a little olive oil and roast for about 20 minutes

  2. In a large pan, cook the onion and garlic in the olive oil over medium heat for about five minutes

  3. Add the cumin, coriander and paprika and cook for two more minutes stirring continuously to cook the spices

  4. Add the harissa and cook for another two minutes

  5. Add the coconut milk to make a sauce

  6. Add the sweet potatoes, cauliflower and spinach and simmer for five minutes

  7. Add the honey, stir and serve with rice or chickpeas

Tips

  1. For a milder version, use less harissa paste as it gives a good kick
