Easy Tasty Chicken Spinach Curry

Ingredients

  • 1 tsp ground turmeric
  • 1 tsp ground ginger
  • 1 1/2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp chilli powder
  • 1 tsp salt
  • 4 boneless skinless chicken breasts, cut into pieces
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, grated
  • 3 fresh tomatoes, chopped
  • 1 can coconut milk
  • 4 cups fresh baby spinach

Preparation

  1. In a small bowl mix together the turmeric, coriander, cumin, ginger and chilli and salt. Set aside.

  2. Heat 1 tbsp of the oil in a large pan over medium heat and cook the chicken till just browned on all sides. Remove from the pan and set aside.

  3. Put the second tbsp olive oil in the pan and cook the onion till caramelised.

  4. Add the spice mix and cook for a couple of minutes stirring continuously.

  5. Add the garlic and cook for two more minutes.

  6. Add the tomatoes and cook for a few minutes till the tomatoes soften.

  7. Stir in the coconut milk and chicken and bring to a simmer. Reduce heat to low and simmer for about 10 to 15 minutes until chicken is cooked through.

  8. Stir in the spinach till it’s wilted.

  9. Taste the sauce and season with salt and pepper if needed.

  10. Serve with rice.

  11. Enjoy!

Tips

  1. You can use whatever central ingredient you like such as chicken and spinach, roast veg, broccoli, chickpeas.

  2. You can adapt it by adding more or less of any spices, and it will still work and be delicious.
