Fluffy Chocolate Cake with Chocolate Frosting
Ingredients
- 200ml soy milk
- 1tbsp apple cider vinegar
- 2 tsp vanilla extract
- 75g applesauce
- 75g rapeseed / coconut oil or vegan butter (melted)
- 200g (spelled) flour
- 150g sugar
- 50g baked cocoa
- 2 1/2 tsp baking soda
- 1 can full fat coconut milk (coconut alternatively whipped cream)
- 180g dark chocolate
- 30g powdered sugar (optional)
Preparation
Heat the oven to 180 degrees
Lightly grease 2️⃣20cm baking mold, line the bottom with baking paper
Mix soy milk, apple cider vinegar, vanilla, apple sauce and oil
Mix the flour, sugar, cocoa, baking powder and salt in a second bowl and slowly add the liquid ingredients until everything is mixed
Put the dough into the mold and bake for approx. 45-60 minutes (chopstick test!), Remove from the oven and let cool completely
Heat and stir coconut milk and chocolate in a saucepan for frosting. Optionally sweeten with powdered sugar. Then let it cool down
Place the frosting in the mold on the cake and let it set in the refrigerator (approx. 2-3 hours)
Then store the cake always in the refrigerator, so that the frosting does not become soft
