Vegan Soft Pear Cake
Ingredients
- 100ml vegetable oil
- 100g sugar of choice
- 1 tbsp vanilla extract
- 270ml soy milk
- 2 cups of flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tbsp apple vinegar
- 1 big pear
- Juice of a half lemon
- 1 tbsp vanilla
- Powdered sugar for dusting
Preparation
Slice the pear in thin slices. Leave a few of them long and cut the rest in smaller pieces. Mix it with lemon juice, vanilla and sugar and let sit until you make the batter.
Mix the sugar with oil and vanilla extract. Add soy milk and give it another stir. Then add flour, baking powder, soda and apple vinegar and a bit more milk if it’s too thick.
Mix the chopped pear pieces in the batter and pour into an oiled cake pan and put long slices on top.
Bake at 180C for 25-30mins. Let cool a bit and then dust with powdered sugar.
