No Bake Matcha Key Lime Tart
Ingredients
Crust
- 1/4 cup oats
- 1/4 cup shredded coconut
- 2 tablespoons melted coconut oil
- 30 grams raw nuts of choice (walnuts or macadamia)
- 1/4 cup pitted dates (about 5 small dates, 80 grams)
- 1 teaspoon vanilla extract
- pinch of salt
Filling
- 200 milliliters coconut cream
- 1/3 teaspoon agar agar powder or cornstarch
- 150 grams vegan white chocolate
- 1/2 teaspoon matcha powder
- zest of one lime
- juice of one lime
Preparation
Place the crust ingredients in a food processor or blender and blend until combined and dough forms.
Place the dough in the tart tin, pressing it into the bottom and edges.
Keep it in the fridge while preparing the filling.
Put the coconut cream and agar agar powder in a pan and cook over gentle heat until it starts boiling.
Stir continuously to prevent burning or sticking.
When it boils, lower the heat and let it thicken for another 1-2 minutes.
Turn off the heat and immediately add the white chocolate, lime juice, matcha powder, and lime zest.
Let it cool for about 5 minutes until it thickens.
Pour the filling over the crust.
Refrigerate until firm, at least 1 hour.
Decorate with fresh lime slices and lime zest if desired.
