Layered Coconut Açaí Popsicles

Ingredients

  • 2 cans full fat coconut milk
  • 1 can coconut cream, refrigerated overnight
  • 1/4 cup Stevia or your choice of sweetener
  • Pinch of salt
  • 1 tsp coconut extract
  • 1/2 tsp vanilla extract
  • 1 Açaí Pouch
  • 2 frozen bananas
  • Popsicle Sticks

Preparation

Coconut layer

  1. Mix coconut milk, coconut cream, sugar, pinch of salt and extracts. Blend until smooth and pour into popsicle molds filling just halfway. Freeze for 1 hour.

Açaí layer

  1. Mix and blend açaí and frozen bananas. Take popsicle molds out of the freezer and pour açaí mixture. Insert popsicle sticks and freeze for 6 hours or overnight.
