Layered Coconut Açaí Popsicles
Ingredients
- 2 cans full fat coconut milk
- 1 can coconut cream, refrigerated overnight
- 1/4 cup Stevia or your choice of sweetener
- Pinch of salt
- 1 tsp coconut extract
- 1/2 tsp vanilla extract
- 1 Açaí Pouch
- 2 frozen bananas
- Popsicle Sticks
Preparation
Coconut layer
Mix coconut milk, coconut cream, sugar, pinch of salt and extracts. Blend until smooth and pour into popsicle molds filling just halfway. Freeze for 1 hour.
Açaí layer
Mix and blend açaí and frozen bananas. Take popsicle molds out of the freezer and pour açaí mixture. Insert popsicle sticks and freeze for 6 hours or overnight.
