Quick Pasta Puttanesca with Tomatoes and Olives

Ingredients

  • 28 oz crushed tomatoes
  • 6 cloves minced garlic
  • 1/2 yellow onion chopped
  • 1/4 cup packed fresh basil, minced
  • 2 Tbsp olive oil
  • 1/2 cup black olives
  • 1/4 cup sliced green olives
  • some crushed red pepper
  • Box of spaghetti noodles

Preparation

  1. Saute garlic and onions with 1 tsp of olive oil for 2-3 minutes. Do not brown.

  2. Reserve the rest of the oil for later.

  3. Add tomatoes. Bring to simmer and cook for 15 minutes over low heat.

  4. Cook noodles to al dente in salted water.

  5. While noodles are cooking, add basil and remaining olive oil to the sauce.

  6. Reserve 1/4 cup of pasta water and add it to the tomato sauce.

  7. Drain noodles and add them to the sauce.

  8. Toss and add in olives.

  9. Let sit in sauce for 5-10 minutes before serving.
