Spicy Udon Stir-Fry with Tofu and Green Beans

Ingredients

  • 1 packet firm tofu
  • 1/2 cup green beans
  • 4 mushrooms
  • 1/4 cup chickpeas
  • 2 teaspoons miso
  • 1 teaspoon sesame oil
  • 1/2 teaspoon tamari
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1/2 cup water
  • 2 tablespoons lime juice
  • 1/2 teaspoon sesame seeds
  • Salt and pepper to taste

Preparation

  1. Heat oil in a frying pan and add the tofu. Cook for about 5 minutes on each side until browned. Remove from the pan and set aside.

  2. Add the green beans, mushrooms, and chickpeas to the same pan.

  3. Add the onion powder, garlic powder, miso, tamari, sesame oil, lime juice, water, salt, and pepper to taste. Cook until the liquid evaporates.

  4. Add the fried tofu back to the pan.

  5. Cook the udon noodles according to the package directions. Drain the water.

  6. Mix in chili oil, chili flakes, and soy sauce to taste.

  7. Serve the udon with the stir-fry and sprinkle sesame seeds on top.
