Tempting Curried Chickpea Stuffed Sweet Potatoes

Ingredients

  • 1/2 small yellow onion finely diced
  • 1 clove garlic minced
  • 1 carrot diced
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tbsp cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne
  • 1/2 tsp ground cloves
  • 1/2 tsp ground pepper
  • Salt
  • 2 tbsp tomato paste
  • 1 can crushed tomatoes
  • 1 can drained rinsed chickpeas
  • 1 can coconut milk

Preparation

  1. Sauté onions until soft, add garlic.

  2. Add spices and tomato paste and stir for about 2 minutes.

  3. Add tomatoes, scrape bits off bottom of pan.

  4. Add chickpeas.

  5. Bring to a boil and then simmer for approximately 20 minutes.

  6. Add can of coconut milk and simmer.

  7. Bake sweet potatoes until done.

  8. Slice down the middle.

  9. Scoop out some sweet potato flesh for future use.

  10. Stuff with chickpea curry mix and bake at 375 for 15 minutes.

  11. Optionally add smashed avocado, cilantro, and pea shoots.

  12. Season with salt and pepper, and drizzle with olive oil.
