Turkish Stuffed Bulgur Köfte
Ingredients
Filling
- 2 large onions
- 400 grams ground meat
- 1 teaspoon salt
- 1 teaspoon red pepper flakes
- 1 teaspoon black pepper
- a handful of chopped parsley
- half a cup of walnuts
- oil
Dough
- 3 cups hot water
- 2 cups fine bulgur
- 1 cup semolina
- 1 tablespoon tomato paste
- 1 tablespoon pepper paste
- 1 teaspoon salt
- 1 teaspoon red pepper powder
- 1 egg
- 1 boiled potato
- 3 tablespoons flour
Preparation
Heat oil in a pan and sauté the onion.
Add ground meat and cook until done.
Stir in salt, red pepper flakes, and black pepper.
Mix in crushed walnuts.
Turn off heat, let cool slightly, then add chopped parsley and mix.
Combine fine bulgur and semolina in a bowl, pour hot water over them, and let sit for 15 minutes until water is absorbed.
Add tomato paste, pepper paste, salt, red pepper powder, egg, boiled potato, and flour, then knead vigorously for at least 20-30 minutes.
Line a Turkish coffee cup with a plastic bag, press a piece of dough into it to thin, add filling, seal, and roll into a ball.
Heat oil in a pot, fry the köfte for 3-4 minutes, and drain on paper towels.
Tips
Keep hands wet while shaping to prevent dough from sticking.
Knead the dough for at least 20-30 minutes for best results.
