Turkish Boiled Stuffed Köfte

Ingredients

Filling

  • 500g medium-fat ground beef
  • 5-6 medium onions
  • half bunch parsley
  • red pepper flakes, black pepper, salt
  • optional tomato or pepper paste
  • half cup coarsely chopped walnuts

Outer dough

  • 2 cups fine bulgur for köfte
  • 3 cups yarma or semolina
  • 1 teaspoon salt
  • warm water for moistening
  • optional coriander

Preparation

  1. Heat oil in a pan and add ground beef, then cook well.

  2. Chop onions and add to the meat along with salt, and cook thoroughly.

  3. If using, add tomato or pepper paste at this stage.

  4. Add red pepper flakes and black pepper, turn off the heat, and mix in finely chopped parsley.

  5. Transfer to a bowl, let cool, then add chopped walnuts, cover, and refrigerate.

  6. For the outer dough, mix bulgur and yarma with warm water and salt, cover, and let rest.

  7. Once the filling is fully cooled, knead the dough with a little water until well combined.

  8. Shape into egg-sized balls, hollow out with your finger, stuff with filling, and seal.

  9. Boil in salted water until they float, then cook for an additional 2-3 minutes.

  10. Heat oil in a pan, add paprika or red pepper flakes, and pour over the boiled köfte.

  11. Serve hot.

Tips

  1. Prepare the filling the night before for better results.

  2. Avoid adding too much water to the dough mixture.
