Turkish Kebab with Lavash Bread

Ingredients

Lavash bread

  • 4 cups flour
  • 1.5 cups lukewarm water (slightly more)
  • 2 teaspoons salt
  • Half packet dry yeast

Kebab

  • 1 kg ground meat
  • 200g tail fat
  • 1 large onion
  • 3 cloves garlic
  • 2 bell peppers
  • Parsley (a bit)
  • Salt
  • Red pepper flakes
  • Hot chili powder
  • Cumin

Preparation

  1. Mix the lavash bread ingredients to form a dough

  2. Knead the dough until smooth

  3. Let the dough rise in a warm place for about an hour

  4. Roll out the dough and bake in a hot oven until puffed and golden

  5. For the kebab, blend the onion, garlic, and bell peppers in a food processor

  6. Squeeze out excess water from the blended mixture

  7. Combine the blended vegetables with ground meat, tail fat, parsley, salt, red pepper flakes, hot chili powder, and cumin

  8. Form the mixture into kebab shapes or patties

  9. Grill the kebabs over medium-high heat until cooked through and browned

  10. Serve the kebabs wrapped in lavash bread
