Antep Kebab with Vegetables

Ingredients

  • 1250 grams ground meat
  • 250 grams tail fat
  • 1 bunch parsley
  • Salt
  • Black pepper
  • Red pepper flakes

Piyaz

  • Half bunch parsley
  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • Salt
  • Lemon juice

Onion salad

  • 1 onion
  • Urfa pepper
  • Red pepper flakes
  • Sumac
  • Tomato paste
  • Olive oil
  • Lemon juice

Preparation

  1. Mix all kebab ingredients in a deep bowl, cover with plastic wrap, and let rest in the refrigerator for a few hours.

  2. Finely chop the ingredients for the piyaz in a separate place.

  3. Shape the rested meat onto skewers with wet hands and grill on a barbecue.

  4. Wrap the grilled kebab in lavash with piyaz and serve.

Tips

  1. Optionally, prepare onion salad or shepherd's salad to accompany the dish.

  2. You can use ready-made lavash or make it yourself.
