Beef Shawarma with Tahini Sauce

Ingredients

  • 1/2 kilogram veal slices
  • 2 cloves crushed garlic
  • 2 tablespoons olive oil
  • 2 tablespoons vinegar
  • 1 teaspoon ground coriander
  • 1 teaspoon meat seasoning
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Tahini sauce

  • 1/2 cup tahini
  • 1/4 cup water
  • 1/4 cup lemon juice
  • 1 tablespoon vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin

Serving

  • Lebanese bread
  • pickles
  • onion
  • sumac
  • parsley

Preparation

  1. In a deep glass dish, place the garlic, oil, vinegar, coriander, pepper, and salt, mix well, add the meat slices, mix, cover, and refrigerate for several hours or overnight.

  2. For the tahini sauce, place the ingredients in a deep plate and whisk with a fork until the sauce forms; if it is thick, add more water.

  3. In a wide pan, place the meat without the marinade, stir over medium heat until its water evaporates, add the marinade, add 1 cup of water, reduce the heat, and cook for 10 minutes until done and water evaporates.

  4. Take a slice of bread, spread it with a little tahini, add some shawarma meat, add onion slices, a little pickles, sprinkle some sumac, and roll the bread.

  5. On a serving plate, place onion slices and parsley, place the shawarma sandwiches, and serve with pickles.
