Herb-Marinated Grilled Jumbo Shrimp

Ingredients

  • 1 kg jumbo shrimp
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil or corn oil
  • 4 cloves garlic, crushed
  • 2 teaspoons fish spices
  • 2 teaspoons basil
  • 2 teaspoons oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon crushed chili

Preparation

  1. Wash the shrimp and remove the vein from the back without removing the tail.

  2. In a deep bowl, combine lemon zest, lemon juice, vinegar, soy sauce, oil, garlic, fish spices, basil, oregano, salt, pepper, and crushed chili; mix well. Add the shrimp, toss to coat, and refrigerate for about an hour.

  3. Prepare grilling skewers and thread a few shrimp and tomatoes onto each skewer.

  4. Wipe a skillet with a little oil and heat it well. Add the skewered shrimp and cook until the bottom browns, then flip and cook for a few more minutes until the shrimp is done. Serve hot.
