Herb-Marinated Grilled Jumbo Shrimp
Ingredients
- 1 kg jumbo shrimp
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 2 tablespoons vinegar
- 2 tablespoons soy sauce
- 2 tablespoons olive oil or corn oil
- 4 cloves garlic, crushed
- 2 teaspoons fish spices
- 2 teaspoons basil
- 2 teaspoons oregano
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon crushed chili

Preparation
Wash the shrimp and remove the vein from the back without removing the tail.
In a deep bowl, combine lemon zest, lemon juice, vinegar, soy sauce, oil, garlic, fish spices, basil, oregano, salt, pepper, and crushed chili; mix well. Add the shrimp, toss to coat, and refrigerate for about an hour.
Prepare grilling skewers and thread a few shrimp and tomatoes onto each skewer.
Wipe a skillet with a little oil and heat it well. Add the skewered shrimp and cook until the bottom browns, then flip and cook for a few more minutes until the shrimp is done. Serve hot.
