Shish Tawook with Garlic Sauce

Ingredients

  • 8 large pieces chicken fillet

Marinade mix

  • 1 cup yogurt
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons soy sauce
  • 1/4 cup white vinegar
  • 2 tablespoons tomato paste
  • 1 tablespoon paprika
  • 1 teaspoon ground cardamom
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon crushed chili
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 1 teaspoon ground coriander
  • 2 teaspoons salt

Garlic sauce

  • 2 cups water
  • 6 tablespoons starch
  • 1 teaspoon salt
  • 4 cloves crushed garlic
  • 1/2 cup corn oil
  • 1/2 teaspoon lemon juice

Vegetables

  • small tomatoes
  • small onions
  • small mushrooms
  • cut bell peppers

For serving

  • Arabic bread
  • onion
  • parsley
  • pickles

Preparation

  1. Cut the chicken into approximately 1-inch cubes.

  2. In a bowl, place the yogurt, oil, juice, sauce, vinegar, paste, paprika, cardamom, garlic powder, onion powder, chili, turmeric, black pepper, coriander, and salt; use a whisk to mix until homogeneous.

  3. Place the chicken in the marinade for several hours or overnight. If time is short, you can grill without marinating, but marinating helps for better flavor and makes chicken tender and delicious.

  4. Prepare a wide tray and place a piece of parchment paper on it.

  5. Use wooden or metal skewers, thread the chicken alternately with vegetables, place them on the tray, then use a brush to apply a little olive oil. You can use a spray oil to distribute it easily on the chicken.

  6. Preheat the oven grill, grill the chicken for about 20 minutes, turning the skewers occasionally to brown well.

Garlic sauce

  1. In a small saucepan, place water and starch, heat over low heat, stirring continuously with a whisk until smooth and thickened, then place in a wide plate and let it cool slightly; do not put in the fridge. It should be somewhat warm, not hot or cold, to avoid it becoming hard to mix later.

  2. In a blender jug, place the starch mixture, crushed garlic, and salt but do not add lemon juice now, blend while continuously adding the oil in a very thin stream until it thickens and the oil starts to form on the surface; it may not take all the oil. Add lemon juice and continue blending to get a wonderful white garlic sauce with mayonnaise-like consistency.

  3. Place the garlic sauce in a glass container and leave it in the fridge for about an hour before serving.
