Easy Orange Chocolate Slice and Bake Cookies

Ingredients

Dough

  • 100 g dark chocolate
  • 200 g all-purpose flour
  • 120 g sugar
  • 50 g cornstarch
  • a pinch of salt
  • 1 orange
  • 1 medium egg
  • 130 g cold butter

For dusting and glaze

  • 100 g powdered sugar
  • all-purpose flour, for dusting

Preparation

  1. Finely chop the chocolate and set aside. Mix flour, sugar, cornstarch, and salt in a mixing bowl. Wash the orange with hot water, pat dry, and finely grate the zest. Halve the orange and squeeze the juice.

  2. Add the orange zest, 2 tablespoons of juice, egg, and cold butter pieces to the flour mixture and knead with your hands until a dough forms. Knead in the chopped chocolate. Divide the dough in half and shape each portion into a log about 4 cm in diameter. Flatten the logs slightly with the palm of your hand and wrap in plastic wrap. Freeze for 30 minutes.

  3. Preheat the oven to 180°C (350°F) conventional or 160°C (320°F) convection. Line two baking sheets with parchment paper. Remove the first dough log from the freezer and slice into thin rounds about 0.5 cm thick.

  4. Place the cookie rounds cut-side up on the prepared baking sheet and bake for 12-14 minutes. Slice and bake the second log similarly.

  5. Whisk the remaining orange juice with powdered sugar to make a thick glaze. Drizzle or dip the cooled cookies in the glaze.

Storage

  1. Store the cookies in an airtight container at room temperature for up to 3 weeks.
