Quick Chocolate Almond Cake

Ingredients

  • 200 g dark chocolate (at least 60% cocoa content)
  • 200 g soft butter
  • 200 g sugar
  • 1 packet vanilla sugar
  • a pinch of salt
  • 200 g ground almonds
  • 1/2 packet baking powder
  • 60 g all-purpose flour
  • 4 large eggs
  • butter, for greasing the pan
  • flour, for dusting the pan
  • powdered sugar, for dusting

Preparation

  1. Preheat the oven to 180°C (350°F) conventional or 160°C (320°F) convection

  2. Grease a 26 cm springform pan with butter and dust with flour

  3. Chop the chocolate into small pieces, place in a metal bowl with the butter, and melt over a water bath

  4. In a bowl, combine sugar, vanilla sugar, salt, ground almonds, baking powder, and flour

  5. Pour in the melted chocolate-butter mixture and stir well

  6. Add the eggs one at a time, stirring into the batter

  7. Stir for 3 minutes until smooth

  8. Pour the batter into the prepared springform pan and smooth the top

  9. Bake for about 45 minutes, testing with a toothpick for doneness

  10. Let the cake cool slightly on a wire rack

  11. Loosen the springform pan edge with a knife and remove

  12. Let the cake cool completely

  13. Dust with powdered sugar and serve

Tips

  1. Store under a cake dome for at least 3 days

  2. The cake can be frozen in slices
