Quick Chocolate Almond Cake
Ingredients
- 200 g dark chocolate (at least 60% cocoa content)
- 200 g soft butter
- 200 g sugar
- 1 packet vanilla sugar
- a pinch of salt
- 200 g ground almonds
- 1/2 packet baking powder
- 60 g all-purpose flour
- 4 large eggs
- butter, for greasing the pan
- flour, for dusting the pan
- powdered sugar, for dusting
Preparation
Preheat the oven to 180°C (350°F) conventional or 160°C (320°F) convection
Grease a 26 cm springform pan with butter and dust with flour
Chop the chocolate into small pieces, place in a metal bowl with the butter, and melt over a water bath
In a bowl, combine sugar, vanilla sugar, salt, ground almonds, baking powder, and flour
Pour in the melted chocolate-butter mixture and stir well
Add the eggs one at a time, stirring into the batter
Stir for 3 minutes until smooth
Pour the batter into the prepared springform pan and smooth the top
Bake for about 45 minutes, testing with a toothpick for doneness
Let the cake cool slightly on a wire rack
Loosen the springform pan edge with a knife and remove
Let the cake cool completely
Dust with powdered sugar and serve
Tips
Store under a cake dome for at least 3 days
The cake can be frozen in slices
