Creamy Avocado Pasta with Butter Beans
Ingredients
- 5 oz gluten-free pasta of choice
- 1/2 medium onion, chopped
- 1 clove garlic, minced
- 1 can butter beans, drained and rinsed
- 2 cups de-stemmed and chopped kale
- 1 large avocado, mashed
- Juice of 1/2 lime
- 2 tbsp tamari
- 1 tbsp nutritional yeast
- 1 tbsp apple cider vinegar
- Black pepper, to taste
Preparation
Cook the pasta according to packaging instructions.
Meanwhile, add the onion and the garlic to a non-stick frying pan and cook for 2-3 minutes.
Then, stir in the butter beans and kale with around 2 tbsp water and sauté until the kale wilts.
Drain and rinse the pasta, then transfer to a large mixing bowl together with the beans, avocado, lime juice, tamari, nutritional yeast, apple cider vinegar and black pepper.
Stir together well and serve.
