Loaded Vegetarian Mac and Cheese
Ingredients
- 150g Napolina macaroni pasta
- 400ml water
- 6 Laughing Cow extra light cheese triangles
- 20g grated Italian hard cheese (vegetarian parmesan)
- 40g Sainsburys grated mozzarella
- 1 Moving Mountains plant-based sausage
- Onion crispies

Preparation
Cook the macaroni in 400ml boiling water until nearly done.
Add the cheese triangles and stir until a sauce forms; cook longer for a thicker sauce and add more water if needed.
When ready to serve, add the grated Italian hard cheese and grated mozzarella; stir until cheese webs form.
Split the mixture into portions if preparing variations.
Top with sliced and fried plant-based sausage and a sprinkle of onion crispies for the vegetarian version.
