Loaded Vegetarian Mac and Cheese

Ingredients

  • 150g Napolina macaroni pasta
  • 400ml water
  • 6 Laughing Cow extra light cheese triangles
  • 20g grated Italian hard cheese (vegetarian parmesan)
  • 40g Sainsburys grated mozzarella
  • 1 Moving Mountains plant-based sausage
  • Onion crispies

Toppings

  • Morrisons garlic bread slices (optional)
  • Salad (optional)

Preparation

  1. Cook the macaroni in 400ml boiling water until nearly done.

  2. Add the cheese triangles and stir until a sauce forms; cook longer for a thicker sauce and add more water if needed.

  3. When ready to serve, add the grated Italian hard cheese and grated mozzarella; stir until cheese webs form.

  4. Split the mixture into portions if preparing variations.

  5. Top with sliced and fried plant-based sausage and a sprinkle of onion crispies for the vegetarian version.
