Smoky Bacon and Tomato Pasta
Ingredients
- 250g smoked lean bacon, cut into cubes
- 2 tbsp olive oil
- 1 large white onion, finely chopped
- 2 red peppers, cut into small cubes
- 2 cloves garlic, grated
- 1 tsp smoked paprika
- 1 tbsp tomato puree
- 1 can chopped tomatoes
- optional: 1/2 tsp chilli flakes
- pasta (amount as needed)
Preparation
Cook the pepper and onion in the olive oil over medium to high heat until softened, about 10 minutes.
Add the bacon and garlic and cook for a few more minutes.
Add the paprika and mix well.
Add the tomato puree and canned tomatoes, bring to a simmer, lower the heat and cook for 20 minutes.
While the sauce is simmering, cook the pasta.
If using, add the chilli to the sauce and season with salt and pepper.
Stir the cooked pasta through the sauce.
Serve with grated cheese.
Tips
Optionally, add grated cheddar cheese on top and bake in an oven-proof dish to make a pasta bake.
Serve with broccoli and sweetcorn for additional vegetables.
