Hearty Chorizo Bolognese with Vegetables and Pasta
Ingredients
- 2 tbsp olive oil
- 1 large onion
- 2 large carrots
- 4 stalks celery
- 250g chorizo
- 1 kg mince (half beef half pork)
- 3 tbsp tomato purée
- 4 cloves garlic
- 1 - 2 courgettes
- 2-3 red peppers
- 2 cans chopped tomatoes
- 1 cube beef stock
- salt and pepper
- pasta of your choice to serve
Preparation
Wash and chop all the vegetables
Cook the onion, carrots and celery in the olive oil for ten minutes over medium heat
Chop the chorizo and cook for 5 minutes
Add the mince and break it up, combining with the vegetables
Add the tomato purée and garlic, then mix through
Add the courgettes and peppers
Add the chopped tomatoes, refill both cans with water and add this too
Add the beef stock
Cover and simmer for 2 hours, skim off excess oil with a spoon around the edges of the pan
Uncover, stir well and simmer for another one to two hours until desired thickness and flavor is achieved
Season and serve with spaghetti
