Healthy Vegetable Bolognese Sauce

Ingredients

  • 1 large onion
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 1 kg lean beef mince
  • 2 tablespoons tomato purée
  • 2 cans lentils
  • 2 carrots
  • 2 courgettes
  • 200g mushrooms
  • 2 red peppers
  • 2 cans chopped tomatoes
  • 1 beef stock cube
  • small bunch thyme
  • salt and pepper
  • optional - 1 tsp chilli flakes

Preparation

  1. Cook the onion in the olive oil till soft. Add the beef and brown all over. Add the garlic and cook for another minute.

  2. Add the tomato purée, mix well and cook for a minute.

  3. Add all the vegetables and mix well.

  4. Add the chopped tomatoes, refill both hands with water and add this too. Mix well.

  5. Add the thyme and beef stock.

  6. Bring to a gentle simmer, cover and cook for one hour, stirring a couple of times throughout.

Tips

  1. You can add as many or as few vegetables as you like to increase nutrients.

  2. Finely chop or grate the vegetables if your kids are picky; they will melt into the sauce and enhance flavor.
