Easy Chorizo Pasta with Vegetables

Ingredients

  • 1 cup chopped chorizo (about 400g)
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 red peppers, chopped
  • 2 cloves garlic, chopped
  • 1 can chopped tomatoes
  • 1 veg stock cube
  • 500g pasta
  • large handful green beans
  • 1/2 cup double cream
  • parsley to garnish

Preparation

  1. Put the chorizo and olive oil in the pan and cook for five minutes till the oils start to release

  2. Add the onions and pepper and cook for ten minutes till softened

  3. Add the garlic and cook for another two minutes

  4. Add the chopped tomatoes, refill the can with water and add that too, also add the vegetable stock cube and cook for 20 minutes

  5. While that’s happening cook the pasta, for the last minute of cooking time add the green beans and drain all together

  6. Add the double cream to the sauce and mix through

  7. Add the pasta and beans and mix through

  8. Garnish with parsley and serve

Serving suggestions

  1. Serve with side vegetables such as broccoli, peas, or green leafy salad
