Vegan Hokkien Noodle Stir Fry Dish

Ingredients

  • Hokkien noodles
  • Choice of protein (e.g., vegan meat)
  • Vegetables (e.g., gailan, broccolini)
  • Dark soy sauce
  • Light soy sauce
  • Sweetener (e.g., coconut sugar)
  • Pepper
  • Vegan oyster sauce (optional)
  • Green onions
  • Toasted sesame oil
  • Sesame seeds
  • Fresh chilli (optional)

Preparation

  1. Bring a saucepan of water to the boil, add hokkien noodles, and after a minute gently separate the strands. Drain and set aside.

  2. Fry your choice of protein until golden and crispy, then set aside.

  3. Heat a wok or frypan on high heat, add a splash of oil, and fry any veggies for 2-3 minutes until semi-cooked.

  4. Add the noodles and protein, season with dark soy sauce, light soy sauce, sweetener, pepper, and optional vegan oyster sauce.

  5. Toss until well coated and cook for an additional 1-2 minutes until veggies and noodles are fully cooked. If the pan dries up, add a splash of water and continue frying.

  6. At the end, add a handful of green onions, drizzle with toasted sesame oil, turn off the heat, and serve. Top with more green onion, sesame seeds, or fresh chilli if desired.
