Vegan Pad Thai
Ingredients
- 1 red bell pepper
- 1 yellow bell pepper
- 1 carrot
- 1/4 purple cabbage
- 100g - 1cup edamame beans (or tofu)
- 180g - 1 1/2cup rice noodles
- garlic, ginger, fresh chilies
- to garnish: green onions, limes, crushed peanuts
- for sauce: 1 tablespoon dark soy sauce, 2tsp soy sauce, 1tbs peanut butter, 1tbs rice vinegar, 1tbs sugar (or date sugar), 1tbs tamarind sauce
Preparation
How to
Sauté garlic, ginger, chilies and add chopped veggies. In the meanwhile, cook rice noodles
Prepare sauce by mixing all ingredients, pour in the veggies and add noodles. Garnish with toppings and enjoy
