Vegan Nutty Apple Chocolate Cake

Ingredients

  • 115g vegan butter (1/2 cup)
  • 65g + 150g brown sugar (1/3 cup + 3/4 cup)
  • 250g applesauce (1 cup)
  • 1 tbsp vanilla extract
  • 1/2 cup almond milk
  • 180g plain flour (1.5 cup)
  • 1.75 tsp baking powder
  • 1 tsp cinnamon
  • 2 apples, peeled, cored and diced
  • 50g dark chocolate, chopped
  • 100g mixed nuts, chopped

Preparation

  1. Preheat the oven to 180 c (350 f)

  2. Beat the butter with 150g brown sugar

  3. Add in the applesauce, vanilla, almond milk and mix until smooth

  4. Separately, mix the flour, baking powder and cinnamon

  5. Sift and fold in the flour mixture into the butter mixture

  6. Stir the remaining sugar (65g) with the chopped apples

  7. Stir in half the apples into the batter as well as the chopped chocolate and mixed nuts

  8. Pour the batter into a cake pan (lined, non stick or greased)

  9. Sprinkle over the remaining apples and press lightly into the batter

  10. Bake for 20-35 minutes, or until a knife comes out clean

  11. Cool fully, then slice and enjoy!
