Vegan Sweet Potato Gnocchi

Ingredients

  • 3 small sweet potatoes
  • Olive oil
  • About 350g flour
  • 2 tsp salt
  • 2 cloves garlic
  • 2 tsp sage
  • 1/2 cup cooked peas
  • 1/2 cup cooked mushrooms
  • Salt, pepper

Preparation

  1. Preheat oven to 200°C or boil sweet potatoes until soft

  2. Mash the sweet potatoes until smooth

  3. Mix mashed sweet potatoes with flour and 2 tsp salt to form a dough

  4. Roll dough into ropes and cut into small gnocchi pieces

  5. Boil gnocchi in salted water until they float to the surface

  6. In a separate pan, sauté garlic and sage in olive oil until fragrant

  7. Add cooked peas and cooked mushrooms to the pan, stir to combine

  8. Add boiled gnocchi to the pan, season with salt and pepper, and toss together
