Vegan Tofu Nuggets with Smoky Dipping Sauce
Ingredients
- 16 oz block super firm tofu or extra firm tofu
- 1 vegan “chicken” or vegetable bouillon cube
- 1 tbsp tamari
- 1 tbsp rice vinegar
- 1/2 tsp ground coriander
- 1/4 tsp white pepper
- 2 tsp light brown sugar
- 2 tbsp potato starch or corn starch
- 2 tbsp avocado oil
- Flaky salt for serving, optional
Smoky maple dijon dipping sauce
- 3/4 cup plain unsweetened yogurt
- 1 tbsp Dijon mustard
- 1 clove garlic, grated
- Juice and zest of half a lemon
- 1 tbsp maple syrup
- 1 tbsp hot sauce
- 1/2 tsp smoked paprika
- 1/2 tsp kosher salt
Preparation
Press the tofu to remove excess water and cut into nugget-sized pieces
Mix the marinade by combining the bouillon cube, tamari, rice vinegar, coriander, white pepper, and brown sugar
Marinate the tofu pieces for at least 30 minutes
Coat the marinated tofu with potato starch or corn starch
Cook the coated tofu in a skillet with avocado oil or in an air fryer until crispy and golden
For the dipping sauce, combine yogurt, Dijon mustard, grated garlic, lemon juice and zest, maple syrup, hot sauce, smoked paprika, and salt in a bowl and mix well
Serve the tofu nuggets with the dipping sauce and optional flaky salt
