Tofu Skewers with Spicy Peanut Sauce
Ingredients
Tofu and skewers
- 8 wood skewers
- 1 package extra firm or high protein tofu
Tofu marinade
- 2 Tbsp soy sauce, gluten free
- 1/2 Tbsp maple syrup
- 1/2 tsp garlic powder
- 2 tsp sriracha
- 1 tsp rice vinegar
Spicy peanut sauce
- 2 Tbsp creamy peanut butter
- Juice of 1/2 small lime
- 1 Tbsp soy sauce, gluten free
- 1 tsp maple syrup
- 1 tsp sriracha
- 1/2 tsp rice wine vinegar
Preparation
Soak the wood skewers in warm water for 20-30 minutes.
Press the tofu to remove excess water.
Combine all the spicy peanut sauce ingredients in a medium bowl and mix, then set aside.
Cut the tofu into 1-inch cubes.
Mix the tofu marinade ingredients in a medium bowl and whisk.
Toss or brush the marinade onto the tofu cubes and save any leftover marinade.
Skewer the tofu cubes, leaving a little space between each piece.
Preheat a pan or grill pan to medium heat, add oil, and cook the skewers for 5 minutes.
Brush additional marinade on top, flip, and cook for another 5 minutes or until the outside is slightly crispy.
Remove the skewers from the heat and serve with the spicy peanut sauce, sesame seeds, fresh chopped cilantro, and rice.

Pair this tofu with rice, noodles, or veggies for a complete meal.
