Tofu Skewers with Peanut Sauce

Ingredients

  • 8 wooden skewers
  • 1 package extra firm tofu

Tofu marinade

  • 2 Tbsp soy sauce, gluten free
  • 1/2 Tbsp maple syrup
  • 1/2 tsp garlic powder
  • 2 tsp sriracha
  • 1 tsp rice vinegar

Spicy peanut sauce

  • 2 Tbsp creamy peanut butter
  • 1/2 small lime, juiced
  • 1 Tbsp soy sauce, gluten free
  • 1 tsp maple syrup
  • 1 tsp sriracha
  • 1/2 tsp rice wine vinegar

Preparation

  1. Soak the wooden skewers in warm water for 20-30 minutes.

  2. Press the tofu to remove excess water.

  3. Combine all the spicy peanut sauce ingredients in a medium bowl and mix, then set aside.

  4. Cut the pressed tofu into 1-inch cubes.

  5. Mix the tofu marinade ingredients in a medium bowl and whisk.

  6. Toss or brush the marinade onto the tofu cubes and save any leftover marinade.

  7. Thread the tofu cubes onto the skewers, leaving a little space between each piece.

  8. Preheat a pan or grill pan to medium heat, add oil, and cook the skewers for 5 minutes.

  9. Brush additional marinade on the skewers, flip, and cook for another 5 minutes or until the outside is slightly crispy.

  10. Remove the skewers from the heat and serve with the spicy peanut sauce, sesame seeds, fresh chopped cilantro, and rice.
