Tofu Skewers with Peanut Sauce
Ingredients
- 8 wooden skewers
- 1 package extra firm tofu
Tofu marinade
- 2 Tbsp soy sauce, gluten free
- 1/2 Tbsp maple syrup
- 1/2 tsp garlic powder
- 2 tsp sriracha
- 1 tsp rice vinegar
Spicy peanut sauce
- 2 Tbsp creamy peanut butter
- 1/2 small lime, juiced
- 1 Tbsp soy sauce, gluten free
- 1 tsp maple syrup
- 1 tsp sriracha
- 1/2 tsp rice wine vinegar
Preparation
Soak the wooden skewers in warm water for 20-30 minutes.
Press the tofu to remove excess water.
Combine all the spicy peanut sauce ingredients in a medium bowl and mix, then set aside.
Cut the pressed tofu into 1-inch cubes.
Mix the tofu marinade ingredients in a medium bowl and whisk.
Toss or brush the marinade onto the tofu cubes and save any leftover marinade.
Thread the tofu cubes onto the skewers, leaving a little space between each piece.
Preheat a pan or grill pan to medium heat, add oil, and cook the skewers for 5 minutes.
Brush additional marinade on the skewers, flip, and cook for another 5 minutes or until the outside is slightly crispy.
Remove the skewers from the heat and serve with the spicy peanut sauce, sesame seeds, fresh chopped cilantro, and rice.
