Orange Tofu and Broccoli with Rice Noodles

Ingredients

  • 1 broccoli floret or some frozen broccoli
  • 125g rice noodles
  • for the sauce:
  • 1/4tsp garlic powder
  • 1/4tsp ginger powder
  • 3tbsp japanese soya sauce
  • 3tbsp syrup
  • 1tbsp rice vinegar
  • 1/8tsp cayenne powder - or use sambal oelek
  • pinch of salt
  • 60tbsp water

Preparation

  1. Begin by making the tofu (bake in the oven at 200C for about 25 minutes)

  2. In a bowl add the sauce ingredients, aside from the corn starch and water. Mix together

  3. In a frying pan, add the sauce ingredients and bring to a boil, allow to boil for 2-3 minutes (but don't let it burn)

  4. Make the cornstarch slurry by mixing together the cornstarch and 60ml water. Pour into the frying pan and mix, lowering the tempeteratur to medium and allowing to simmer and thicken. Add the broccoli and tofu and mix into the sauce

  5. Boil the rice noodles

  6. Serve together with the tofu and why not add some salted cashews on top
