Soyrizo Refried Bean Nachos

Ingredients

  • 1.5 cups cooked Peruvian beans
  • 1/4 cup diced onion
  • 3 Tbsp Soyrizo
  • 1/4-1/2 cup vegetable broth
  • Salt and pepper to taste

Toppings

  • Tortilla chips
  • Miyokos pepper jack cheese
  • Miyokos cheddar cheese
  • Jalapenos
  • Tomato
  • Salsa
  • Avocado
  • Cilantro

Preparation

  1. Turn pan on medium high heat and add a splash of vegetable broth.

  2. Sauté diced onions along with Soyrizo for about 3 minutes and then add Peruvian beans.

  3. Splash vegetable broth as needed and simmer and mash lightly for 5-7 minutes. Season with salt and pepper to taste.

  4. Add vegetable broth as needed to achieve desired texture.

  5. Add to a pile of tortilla chips of choice and top with desired toppings.
