Soyrizo Refried Bean Nachos
Ingredients
- 1.5 cups cooked Peruvian beans
- 1/4 cup diced onion
- 3 Tbsp Soyrizo
- 1/4-1/2 cup vegetable broth
- Salt and pepper to taste
Toppings
- Tortilla chips
- Miyokos pepper jack cheese
- Miyokos cheddar cheese
- Jalapenos
- Tomato
- Salsa
- Avocado
- Cilantro
Preparation
Turn pan on medium high heat and add a splash of vegetable broth.
Sauté diced onions along with Soyrizo for about 3 minutes and then add Peruvian beans.
Splash vegetable broth as needed and simmer and mash lightly for 5-7 minutes. Season with salt and pepper to taste.
Add vegetable broth as needed to achieve desired texture.
Add to a pile of tortilla chips of choice and top with desired toppings.
