Vegan Broccoli and Cauliflower Soup

Ingredients

  • 1 head broccoli
  • 1/2 head cauliflower
  • 2 carrots
  • 1 onion
  • 2 garlic cloves
  • olive oil
  • sprinkle of salt
  • 2 1/2 cups broth
  • 1 cup almond milk
  • 1 tsp chili powder
  • 1/2 tsp cayenne
  • salt and pepper to taste
  • 2 tbsp nutritional yeast or cheddar cheese

Preparation

  1. Chop 1 head of broccoli, 1/2 head of cauliflower, 2 carrots, 1 onion, and 2 garlic cloves.

  2. Sauté the onions with a sprinkle of salt in olive oil using the sauté function for 4 minutes.

  3. Stir in the carrots and garlic and cook for another 2 minutes.

  4. Add the remaining vegetables, 2 1/2 cups broth, 1 cup almond milk, 1 tsp chili powder, 1/2 tsp cayenne, salt, and pepper.

  5. Pressure cook for 5 minutes.

  6. Blend the soup using an immersion blender.

  7. Stir in 2 tbsp nutritional yeast or cheddar cheese.

Stove top method

  1. For stove top preparation, follow the same steps but instead of pressure cooking, simmer for about 25 minutes after adding all ingredients.
