Creamy Mushroom and Spinach Pasta

Ingredients

  • 160-200g gf pasta
  • 150 mushrooms
  • 2 garlic cloves
  • 1 shallot or small white onion
  • 1-2 tsp nutritional yeast
  • 1/2 cup dairy free cream
  • 1/2 cup veggie stock
  • 2 large handfuls of spinach

Preparation

  1. Cook pasta according to package instructions

  2. In a pan, sauté garlic and onion until fragrant

  3. Add mushrooms and cook until softened

  4. Pour in veggie stock and dairy-free cream, stir and simmer to make sauce

  5. Add nutritional yeast and mix well

  6. Stir in spinach and cook until wilted

  7. Combine sauce with cooked pasta and serve
