Creamy Mushroom and Spinach Pasta
Ingredients
- 160-200g gf pasta
- 150 mushrooms
- 2 garlic cloves
- 1 shallot or small white onion
- 1-2 tsp nutritional yeast
- 1/2 cup dairy free cream
- 1/2 cup veggie stock
- 2 large handfuls of spinach
Preparation
Cook pasta according to package instructions
In a pan, sauté garlic and onion until fragrant
Add mushrooms and cook until softened
Pour in veggie stock and dairy-free cream, stir and simmer to make sauce
Add nutritional yeast and mix well
Stir in spinach and cook until wilted
Combine sauce with cooked pasta and serve
