Creamy Mushroom and Spinach Pasta

Ingredients

  • 160-200g gf pasta (serves 2)
  • 150 mushrooms
  • 2 garlic cloves
  • 1 shallot or small white onion
  • 1-2tsp nutritional yeast
  • 1/2cup dairy free cream
  • 1/2cup veggie stock
  • 2 large handfuls of spinach

Preparation

  1. Chop garlic, onion, and mushrooms.

  2. Boil the pasta according to package instructions.

  3. Heat a pan with a little spray of oil (optional).

  4. Fry onion, garlic, and mushrooms for 5 minutes over medium heat.

  5. Optionally reserve some fried mushrooms for sprinkling on top.

  6. Add cream, stock, and nutritional yeast to the pan.

  7. Bubble the mixture until it thickens, then reduce heat.

  8. Add cooked pasta to the sauce and coat well.

  9. Add spinach and stir until it wilts in the sauce.

  10. Serve and enjoy.
