Vegan Mushroom Carbonara Pasta
Ingredients
- 160-200g gluten-free pasta (serves 2)
- 150g mushrooms (any type)
- 2 garlic cloves
- 1 shallot or small white onion
- 1-2 teaspoons nutritional yeast
- 1/2 cup dairy-free cream
- 1/2 cup vegetable stock
- 2 large handfuls of spinach
Preparation
Chop the garlic, onion, and mushrooms.
Bring water to a boil and cook the pasta.
Heat a pan with optional oil spray over medium heat.
Fry the onion, garlic, and mushrooms for 5 minutes.
Add the dairy-free cream, vegetable stock, and nutritional yeast.
Bubble the mixture until it thickens, then reduce the heat.
Once the pasta is cooked, add it to the sauce and stir to coat.
Add the spinach and stir until it wilts.
Serve and enjoy.
Tips
Use garlic and onion powder instead of fresh if short on time.
Reserve some fried mushrooms for sprinkling on top as garnish.
